Asian Style Cucumbers

Ingredients
  

  • 1 package Persian cucumbers
  • 1 tsp Brown sugar
  • 3 tbsp Salt,
  • 2 cloves Garlic, minced
  • 1/3 cup Soy sauce, low sodium
  • 2 tbsp Sesame seed oil
  • 2 tbsp Rice wine vinegar
  • 2 Green onions, chopped including white parts
  • 1 tbsp Chili pepper or my chili oil recipe
  • 2 tbsp Sesame seeds

Instructions
 

  • Smash your cucumbers with the back of your knife or a bottle. Give them a good smash, this helps with flavor.
  • Once you've smashed your cucumbers, you will now slice them. I like a thicker slice!
  • Add sliced cucumbers to a bowl and top with a LOT of salt. Let this sit while you prepare everything else. Let cucumber sit for at least 10-15 mins.
  • Mince your garlic, chop your green onions.
  • Now add the rest of your ingredients to the cucumbers. If you don't have chili oil you can use red chili flakes. Use less for less heat. After you mix everything taste it! This is where you can make it to your liking if you think it needs extra of any ingredient!
  • ** Can add chopped avocado or cubed tofu to this to make it a meal!

Notes

Smashing the cucumbers helps all the flavors get into the grooves! I love to add avocados to this for an extra fat, or some cubed tofu to make it a meal!
