Almond Fruit Cups

Ingredients
  

CRUST

  • 2 1/2 cups Almond Flour
  • 1/2 tsp Salt
  • 2 tbsp Cold Vegan Butter
  • 2 tbsp Maple Syrup
  • 1 Flax egg (see notes)
  • 1 tbsp Apple Cider Vinegar

FILLING

  • 8 oz plain, unsweetened vegan yogurt (I like a cashew base yogurt)
  • 1 tsp Vanilla extract
  • 1 tbsp maple syrup
  • 1/4 tsp cardamom
  • 1 cup Berries or fruit of choice

Instructions
 

  • Turn oven on to 350
  • Stir together almond flour and salt
  • Use a fork to cut butter into flour mixture until dough forms a sandy texture
  • Now add your maple syrup, Apple Cider Vinegar, flax egg and mix
  • Divide evenly between about 10 greased muffin tins and use your fingers to press down to form a little bowl in the center so you can fill your cup with yogurt and berries
  • Bake for about 10-12 mins or until golden brown
  • Stir together yogurt, maple syrup, cardamon, & vanilla extract
  • When tarts are COMPLETLEY cooled add your yogurt mixture and a few berries on top and enjoy!

Notes

To make a flax egg: 1 tbsp ground flax meal to 3 tbsp water, stir and let sit for 5 mins.
