Mashed Potatoes

Vegan Mashed Potatoes

Ingredients
  

  • 4 lbs Russet Potatoes.
  • 3 cloves Garlic, chopped.
  • 5 tbsp Butter
  • 1 package Chives, chopped.
  • 1 cup Unsweetened Cashew milk (or a vegan heavy cream)

Instructions
 

  • Peel and roughly chop your potatoes in large chunks. Place potatoes in large pot of salted water with the garlic and boil till fork tender (15-20 mins) The smaller cut potatoes will cook faster!
  • Drain potatoes and let them rest for 5 mins.
  • I like to warm my milk, so it doesn't make the potatoes cold, this is optional!
  • Return the potatoes and garlic to pot and start mashing a little bit, now slowly add in your milk while you mash to desired consistency. If you need a little more milk, you can add it.
  • Add chopped chives, butter, salt and pepper and stir until well combined!

Notes

These potatoes and so easy and delicious! I love using cashew milk as it is VERY creamy, but make sure to get unsweetened!
