Almond Fruit Cups
Ingredients
CRUST
- 2 1/2 cups Almond Flour
- 1/2 tsp Salt
- 2 tbsp Cold Vegan Butter
- 2 tbsp Maple Syrup
- 1 Flax egg (see notes)
- 1 tbsp Apple Cider Vinegar
FILLING
- 8 oz plain, unsweetened vegan yogurt (I like a cashew base yogurt)
- 1 tsp Vanilla extract
- 1 tbsp maple syrup
- 1/4 tsp cardamom
- 1 cup Berries or fruit of choice
Instructions
- Turn oven on to 350
- Stir together almond flour and salt
- Use a fork to cut butter into flour mixture until dough forms a sandy texture
- Now add your maple syrup, Apple Cider Vinegar, flax egg and mix
- Divide evenly between about 10 greased muffin tins and use your fingers to press down to form a little bowl in the center so you can fill your cup with yogurt and berries
- Bake for about 10-12 mins or until golden brown
- Stir together yogurt, maple syrup, cardamon, & vanilla extract
- When tarts are COMPLETLEY cooled add your yogurt mixture and a few berries on top and enjoy!
