Course: Main Course

Materials

  • 8 oz pasta
  • 3 tbsp Treeline Herb & Garlic cheese
  • 2 pieces Garlic cloves, chopped.
  • 4 oz Mushrooms, sliced
  • 1 Zucchini
  • 1 handful Arugula
  • 2 tbsp Vegan butter
  • 1 Lemon (Half for the pasta, half cut up into slices for each individual pasta)
  • 1/3 Cup Toasted Walnuts or Pumpkin Seeds

Instructions

  • boil salted pasta water and cook pasta for about 8-10 mins
  • Sauté the garlic mushrooms and zucchini, add salt and pepper to taste
  • Once pasta is cooked and drained add pasta, veggies, Treeline cheese, butter and your reserved pasta water to pot you cooked the pasta and mix together.
  • Add half juice of your lemon and add arugula
  • Plate pasta, add sliced lemon to plate, and top pasta with toasted walnuts and serve!!

Notes

  • You can add any veggies to this! 
  • you can sub spinach in place of arugula
