Tostada
Ingredients
- 1 Bell pepper, thinly sliced
- 1/2 Onion, thinly sliced
- 1 Sm Zucchini , sliced into half moons
- 4 Tortillas, ( I used Siesta Almond flour)
- 1 140z Vegetarian refried beans
- 1/2 tsp Cumin
- 1/4 tsp Paprika
- 1/2 tsp Chili Powder
- 1/2 tsp Garlic
- 1/4 tsp Salt
Toppings
- Lettuce, thinly sliced
- Avocado or Guacamole
- Black olives
- Follow Your Heart Vegan yellow cheese shreds
- Vegan Sour cream
- Green Onions
- Pickled Jalapenos
- Tomato, chopped
Instructions
- Add beans and a splash of water and salt to a pot and heat through.
- Lightly spray tortillas with oil and place in the air fryer at 400 degrees for about 5 mins. Watch these because they can burn easily!
- Add chopped veggies to a pan and sauté, after about 7 mins add in your seasonings and continue cooking for another 5 mins.
Tostada Assembly
- Carefully add two scoops of beans to your tostada, add as many veggies as you like.
- Top with lettuce, tomato, cheese, avocado, jalapenos, olives and green onions and enjoy!
