Hummus Veggie Sandwich
Ingredients
- 1 Flatbread (I like the Lavish bread from Trader Joes)
- 2 tbsp Hummus
- 1 tbsp Garlic spread (see notes)
- 1 Tomato, thinly sliced
- 1/2 Bell pepper, thinly sliced
- 2 Slices Tofu, thinly sliced
- 1/2 Cucumber, thinly sliced
- 1/2 Red onion, thinly sliced
- Drizzle of balsamic vinegar
Instructions
- Add hummus to flatbread, add garlic spread on top, now pile your veggies: tofu, tomato, cucumbers, red onion, bell pepper and a Drizzle of balsamic. Vegan feta would be good on this too!
