Hummus Veggie Sandwich

Ingredients
  

  • 1 Flatbread (I like the Lavish bread from Trader Joes)
  • 2 tbsp Hummus
  • 1 tbsp Garlic spread (see notes)
  • 1 Tomato, thinly sliced
  • 1/2 Bell pepper, thinly sliced
  • 2 Slices Tofu, thinly sliced
  • 1/2 Cucumber, thinly sliced
  • 1/2 Red onion, thinly sliced
  • Drizzle of balsamic vinegar

Instructions
 

  • Add hummus to flatbread, add garlic spread on top, now pile your veggies: tofu, tomato, cucumbers, red onion, bell pepper and a Drizzle of balsamic. Vegan feta would be good on this too!

Notes

I like the garlic spread from Trader Joes, but I have seen it at almost any grocery store now near the hummus.
