Pesto Flatbread
Ingredients
- 1 14oz Cannoli beans
- 1 Lemon
- 1 Garlic Clove
- Vegan Pesto
- Vegan Treeline Cheese or a Soft Vegan Cheese
- Balsamic vinegar
- 8 Mini sweet peppers, sliced
- 1 Shallot, sliced
- 2 Flatbreads
Instructions
- Place peppers and shallots on a baking sheet and drizzle with oil, salt and pepper and bake at 400 degrees until tender (about 8-10 Mins) pull out and drizzle with balsamic vinegar
- While your peppers cook, drain and rinse cannoli beans. Add to a food processor or blender with 1 glove of garlic, 1 juice from lemon, salt and pepper 3 tablespoons of oil (or can sub water) and blend until smooth!
- Toast your flatbreads
- Now assemble everything! First do a layer of your cannoli hummus, then add your peppers and shallots, add a few dollops of pesto and a few drops of your Soft Cheese, drizzle with balsamic or a balance glaze and enjoy!!
