Vegan "Carna Asada" Tacos
Ingredients
Taco Ingredients
- 3 Garlic cloves, minced
- 1 Lime, zested and juiced
- 2 1/2 tbsp Low sodium soy sauce (Tamari works too)
- 1 tbsp Apple Cider vinegar
- 1 tsp Oregano
- 1 tsp Paprika
- 1 tsp Sugar
- 8 oz Seitan in chunks, thinly sliced
- 2 tbsp Grapeseed oil (or veggie oil)
Easy Slaw
- 5 Radishes, finely chopped
- 2 Green onions, thinly sliced (Green & White parts)
- 1/2 Cucumber, finely chopped
- 1/2 oz Cilantro, finely chopped (stems included)
Instructions
Taco Filling
- Add garlic, half the lime juice, soy sauce, apple cider vinegar, sugar, oregano, paprika, cumin and 1 tbsp veggie oil and mix. Add sliced seitan to marinade and let set for at least 20 mins or longer
- Add remaining lime juice, radishes, green onions, cucumbers, cilantro, drizzle of olive oil and salt. Mix and set aside. This is your slaw for your tacos
- Add seitan and marinade to heated pan and cook until crispy, about 7-10mins.
- Heat tortillas up and assemble tacos. Add seitan, slaw and vegan sour cream if you have it and enjoy!
