Vegan sour cream (see notes) or vegan unsweetened yogurt
1Cucumber half thinly sliced, the other half shredded
1/4cupRed wine Vinegar
1Tomato, thinly sliced
1/2Red onion, thinly sliced
1Lemon
2tbspRas el hanout seasoning (see notes)
2-4Any type of flat bread, or pita pocket
French Fries (optional)
Hummus (optional)
Instructions
Thinly slice seitan
Add your thinly sliced cucumber to your red wine vinegar and let sit
Put sour cream or yogurt into a bowl and squeeze half a lemon into it, add shredded cucumber and a dash of salt.
Heat oil in pan, add seitan and cook until it starts to get a little crispy, now add your ras el hanout seasoning and cook for 1-2 minutes until fragrant
Heat your flat bread in the oven or on top of the stove.
Assembly
Grab your warmed pita pocket, add your vegan sour cream, add hummus if you have it but it's not needed, add marinated cucumber, cooked seitan, red onion, tomato and fries if you have them and enjoy!
Notes
See my vegan sour cream to make from scratch, the Ras El Hanout seasoning is an extra step but is so good for this recipe. You can find the recipe for it on my website, sometimes I can find it in the seasoning section at the store too!
